Sweet Cilantro Lime Salmon

Ingredients

Instructions

  1. Brine the fish in a 9% salt solution (1T salt in 1C water) for 10 minutes to reduce albumin exudation. Rinse off the brining solution and pat the fish dry.
  2. Dry the fish and place it on a parchment-lined baking dish.
  3. Whisk together the oil, lime juice, sugar, garlic and pepper flakes, then pour over the salmon.
  4. Bake at 350 until the salmon flakes easily with a fork.
  5. Plate, garnish with the cilantro, and serve.
